We offer contemporary dishes and traditional favourites across each of the dining offerings at the Hydro Hotel. Head chef James Penn and his team create seasonal dishes using local suppliers where possible. Our fish is caught at Newhaven and meat supplied from Sussex.

We offer vegan and gluten free options and are more than happy to discuss specific dietary requirements in advance to ensure we make your visit as enjoyable as possible. We welcome non-residents alike who would like to dine, enjoy our lounges for a lunch or perhaps make the most of the gardens and our sea view with a coffee or evening drink.
